It’s impossible to imagine Christmas without a delicious Christmas Fruit Cake. This year we put a caffeinated spin to this traditional dessert and it was simply delicious. With an abundance of coffee and rum-soaked fruits, this Christmas Coffee Fruit cake will be a delight for everyone who loves coffee and Christmas.
There's a burst of flavour in every bite, and having this baked in your homes brings along an irresistible Christmassy aroma.
In order to make a strong brew, we used our Forte blend. Its flavor is intense with notes of unsweetened cocoa and dried fruits that complement the flavor profile of the fruit cake very well. This blend enhances the taste of the soaked fruits and the cake as a whole.
Ingredients :
For soaking:
1/4 cup dried cranberries
1/8 cup raisins
1/4 cup tutti frutti
4-5 dates chopped
50 ml rum
1/4 cup orange juice
50 ml espresso
For cake
1 + ½ cup maida
¼ tsp cinnamon
⅛ tsp ginger
½ tsp baking soda
1 tsp baking powder
½ cup vegetable oil
¾ cup brown sugar
1 cup yogurt
Preparation:
Place the dried fruits in a jar and add the rum, orange juice, and espresso. Let it sit for one day.
Preheat the oven to 170°
Combine the flour, cinnamon powder, ginger powder, baking soda, and baking powder in a bowl. Next, combine the oil, sugar, and yogurt in another bowl.
Mix the dry ingredients with the wet ingredients until no dry lumps can be seen. Add the soaked fruits and fold once till mixed. Be careful not to overmix.
Bake for 55-60 minutes or until a toothpick inserted comes out clean. When the cake has cooled, dust it with powdered sugar and enjoy.
