During this journey, the moist monsoon winds from the Arabian Sea naturally processed the beans — giving them a unique flavour, colour, and reduced acidity.
With the advent of faster cargo ships, transportation times were reduced and the natural processing period was lost. To preserve the traditional flavour, coffee farmers on the Malabar coast began replicating the conditions on land — sun-drying green beans in open warehouses and deliberately exposing them to sea air and monsoon winds.
This meticulous process results in beans that swell, fade in colour, and develop a distinctively low-acid, full-bodied, and earthy flavour — unlike any other coffee in the world.
